Sweet and Sticky Honey Mustard Drumsticks


Super Bowl festivities and chicken wings go hand-in-hand. According to the National Chicken Council (yes, there is such an organization), more than 1.25 billion wing portions will be consumed during this year’s Super Bowl weekend -- that's more than 100 million pounds of wings! That’s amazing, and so is this recipe for these sweet and sticky honey mustard drumsticks!

Not to skew the wing-thing for the Council, but this year, you may
opt to serve sweet and sticky chicken drumsticks for a great, gluten-free Super Bowl treat!


Did you know that modified food starch, an additive in many pre-packaged and prepared foods (like barbecue sauce), contains gluten? It's added because it lends texture, moisture and a thick consistency to foods.


If you have gluten allergies, eating all those chicken wings (or drumsticks) can be a bit frightening if you don't know what's in the sauce. Why not make your own?

Gluten can be found in many different foods and products, from ketchup to soy sauce to candy and seasonings. While tries to ensure these good recipes are gluten-free, carefully read the ingredient labels of all food and food products you use for these recipes to ensure they are also gluten-free.

This chicken drumstick recipe was adapted from Gluten-free Cooking.

Sweet and sticky honey mustard drumsticks recipe:
Ingredients:
16 chicken drumsticks
4 tablespoons honey
1 lemon, juiced and zested
1 orange, juiced and zested
3 tablespoons Worcestershire sauce
4 tablespoons prepared plain, gluten-free mustard

Directions:

  • Preheat your oven to 350 degrees F.
  • Use a sharp knife and cut into the fleshy part of each drumstick, several times. Place the drumsticks in a roasting pan in a single layer and set aside.
  • Using a small bowl, mix together the lemon and orange juice and zest, Worcestershire sauce and mustard.
  • Use a brush to apply the mixture to the chicken.
  • Bake for about 50 minutes, turning and basting the chicken throughout the cooking time. Continue until the chicken is cooked through and thickly coated with the glaze. Serve drumsticks hot, or chill them and serve cold.
